Cranberry Orange Bread...


Wishing you a Warm and Happy Thanksgiving...

As I ponder some of the many things I am grateful for, a few items come to mind, though not in any particular order...
  • Hearing the laughter of my family when we all come together.  (Okay, maybe it's not ALL laughter. ;)
  • The warm burst of air that comes from the oven after baking something.
  • Birds at a newly filled bird feeder.
  • A new 'wooly good' winter project to dig into.
  • Rain hitting the window while I am warm and cozy inside.
  • A clean curb after the leaves are picked up.
  • The quietness of early morning before the household comes alive.
All so simple, yet necessary for balance. ;)

I love cranberries.... this bread is super easy and combines
the tartness of cranberry with orange sweetness.
(I can't resist the sparkle of Sanding Sugar, either !)



Cranberry Orange Bread
2 cups flour
1 and 1/2 teaspoons of baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 and 1/4 cup sugar
1 egg
1/2 cup orange juice
1/4 teaspoon orange extract
2 Tablespoons melted butter
2 Tablespoons canola oil
2 Tablespoons water
2 cups whole raw cranberries
1/2 cup coarsely chopped walnuts
1.  Combine flour, baking powder, soda, salt and sugar in bowl.
2.  Add the egg, orange juice, extract, butter, oil and water to the dry ingredients.  Mix until smooth.
3.  Fold in cranberries and walnuts.
4.  Spoon into a greased 9in. x 3in. loaf pan.
5.  Sprinkle generously with Sanding Sugar...

    Sanding Sugar is a coarse sugar that doesn't "melt away" with baking.  It adds beautiful sparkle to baked goods such as Sugar Cookies, Molasses Cookies,
    Blueberry Muffins, Pies, Raisin Cookies...
    it is available in many colors, but I always have the white on hand.
  6.  Bake at 325 degrees for 60 minutes or until toothpick
  comes out clean.
Yields one loaf.
